A delicious and easy dairy free/gluten free take on Zuppa Toscana.
Sauté onions in ghee or avocado oil over medium heat for 3-5 minutes with a pinch of sea salt.
Add carrots and sauté for another 2 minutes.
Brown sausage in that mixture until cooked through.
Add garlic in the last 1-2 minutes of sautéing and then add potatoes, broth, and salt and pepper to taste.
Bring to a boil and simmer for 10-15 minutes until potatoes are tender.
Remove from heat. Add spinach and stir. Add coconut milk and serve immediately.
