I like to use Hunt's Chocolate pudding as an example. You can get the low-fat kind that is 100 calories. But what else does this give you? If you guessed nothing, you'd be correct! You don't get healthy fats or magnesium or fiber or protein! You just get some empty calories.

So...why not make chocolate pudding out of an avocado and celebrate the pudding AND the nutrients?

Description

This avocado pudding is a delicious and healthy dessert option that is made with ripe avocados, sweetener, and coconut milk. 

Ingredients
  • 2 avocados (ripe)
  • 1/2 cup pitted dates (chopped, soaked and drained)
  • 2 tbsp maple syrup
  • 1/2 cup coconut milk (full fat)
  • 1/3 cup cacao powder
Instructions
  1. Add the avocado, soaked dates and maple syrup to the food processor and pulse to combine. Add the coconut milk and blend until the avocado mixture is smooth, scraping down the sides of the bowl as needed.

  2. Add the cacao powder and blend again until combined.

  3. Serve chilled. Enjoy!
